Simple Garlic Pasta
A quick weeknight staple
Ingredients
- 200g spaghetti or linguine
- 4 cloves garlic, thinly sliced
- 4 tbsp olive oil
- 1/4 tsp chili flakes
- Salt and black pepper
- Fresh parsley, chopped
- Parmesan cheese, grated
Instructions
- Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, heat olive oil in a large pan over medium-low heat. Add sliced garlic and cook gently until golden (not brown), about 3-4 minutes.
- Add chili flakes and remove from heat.
- Drain pasta and add to the pan with the garlic oil. Toss well, adding pasta water as needed to create a light sauce.
- Season with salt and pepper, top with parsley and parmesan.
Notes
- Don’t rush the garlic - low and slow prevents bitterness
- Fresh pasta works great here if you have it
- Add a squeeze of lemon at the end for brightness
