Simple Garlic Pasta

A quick weeknight staple

Simple Garlic Pasta

Ingredients

  • 200g spaghetti or linguine
  • 4 cloves garlic, thinly sliced
  • 4 tbsp olive oil
  • 1/4 tsp chili flakes
  • Salt and black pepper
  • Fresh parsley, chopped
  • Parmesan cheese, grated

Instructions

  1. Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large pan over medium-low heat. Add sliced garlic and cook gently until golden (not brown), about 3-4 minutes.
  3. Add chili flakes and remove from heat.
  4. Drain pasta and add to the pan with the garlic oil. Toss well, adding pasta water as needed to create a light sauce.
  5. Season with salt and pepper, top with parsley and parmesan.

Notes

  • Don’t rush the garlic - low and slow prevents bitterness
  • Fresh pasta works great here if you have it
  • Add a squeeze of lemon at the end for brightness
